Eamonn advises on engineering, climate control, lighting and layout. The engagement is design consultancy. It is not a building contract, a supply agreement, or an installation.
Private collectors
A cellar for a collection you mean to keep. The advice covers how the room is planned,
how the wine is held, and how it is lit so a bottle can be found without harming the
wine around it. Temperature, humidity, light, vibration and access are part of that
brief. Your designer and your builder make the room.
Restaurants & bars
Service cellars, reserve rooms and display. Capacity, the path staff take to a bottle,
temperature for wine by the glass and for wine you want to age, and lighting that
belongs in a dining room. The work is coordinated with your interior designer. Eamonn
does not fit out the venue.
Hotels
Guest cellars, sommelier stores and rooms used for events. Layout, climate and lighting
are planned with the hotel’s design team and the people who will run the room.
Construction stays with the contractor already appointed to the hotel.
Wine storage & 3PL
Commercial rooms carry a different load: volume, logging, and a climate that has to
hold. Eamonn advises on the design intent for the envelope, the plant and the layout of
storage and dispatch. The warehouse contractor, the refrigeration contractor and their
insurers deliver the facility and warrant it.
He was chief executive of Artisan Wine Storage when it opened a climate-controlled
facility in Lane Cove West, and he designed Methuselah’s Cellar there.
The case study keeps to the published facts.
For architects & designers
You remain the design lead. Eamonn is instructed by you or by your client, and the fee
letter names who instructs him. He works into your drawing set: comments, cellar
layouts, and briefs for climate and light that your consultants and trades can price
and build. He does not replace you, and he does not direct the builder around you.
In practice that usually means:
A review of your plans, sections and the site photographs.
A layout for racking, display, access and plant space.
A climate brief and a lighting brief written for your consultants.
Coordination through you, so the cellar is settled before it reaches site.
A site review only when the fee letter includes one, quoted before anyone travels.
